Want something to look forward to in the morning? These Banana Crunch Waffles deliver luscious banana flavor in a light and airy package with a delightful crunch and just a hint of tangy zip to keep it all in balance. Sinfully good, but even good for you (no one needs to know!). Perfect with our prickly pear syrup.

Recipe makes five or six 6" Belgian-style waffles.

Ingredients:

9 oz (250g or 2 cups) whole wheat flour
0.5 oz (15g or 1 tbsp) sugar
0.25 oz (8g or 1 tsp) baking powder
0.1 oz (3g or 1/2 tsp) baking soda
0.2 oz (5g or 1 tsp) salt
flaxseeds to desired crunch
3.0 oz (85g or 6 tbsp) melted unsalted butter
10.6 oz (300g) plain yogurt
8.5 oz (237g or 1 cup) milk
4 large eggs
2-3 large bananas cut into slices


Banana Crunch Waffles preparation steps:

1. Blend flour, baking powder, baking soda, suger and salt in large bowl.
2. whisk melted butter, yogurt, milk and eggs in another bowl.
3. fold wet ingredients into dry ingredients.
4. add flaxseeds to desired crunch (I just eyeball it) and stir and finally mix in banana slices.
5. heat waffle maker and oil to prevent sticking. Spoon in batter (about 2 spoonfuls of a large cooking spoon). Close waffle maker and wait for it to signal that the waffles are ready. Take out waffles and repeat with remainder of batter.
